Bake a batch of these festive treats using our easy step-by-step recipe – they make great edible gifts for Christmas

You will need

  • 1 x 320g pack of ready rolled shortcrust pastry
  • 12 tsp mincemeat
  • 1 egg, beaten, to glaze
  • Icing sugar, to decorate
  • 12 wooden lolly sticks
  • Rolling pin
  • Plain flour
  • 5cm (2 inch) fluted circle cookie cutter
  • 3cm (1 ¼ inch) holly/star shaped cookie cutters
  • Non-stick baking sheet
  • Pastry brush
  • Teaspoon
  • Fork
  • Fish slice
  • Wire cooling rack
  • Small sieve

Step 1

Preheat the oven to gas mark 4 (180 C, 160 C fan assisted). Unroll the shortcrust pastry onto a lightly-floured surface, and cut out 24 circles using the cookie cutter, and 24 holly or star shapes.

Step 2

Place 12 of the circles on the non-stick baking sheet, making sure they’re placed well apart.

Secure the lolly sticks by lightly brushing the middle of the pastry circles with water, and placing the end of a lolly stick in the middle.

Step 3

Use the pastry trimmings and off-cuts to roll 12 small pastry balls. Place one ball on top of the stick in the circle, pressing down gently to secure it in place.

Step 4

Place one teaspoon of mincemeat in the centre of each pastry circle, on top of the flattened pastry balls. Lightly brush the edges of the pastry circle with water.

Use your fingers to gently stretch the remaining 12 pastry circles by a millimetre or two, by lightly pressing them to flatten them.

Gently drape the flattened pastry circles over the mincemeat, and press down on the moistened edges to seal them in place.

Step 5

Use the prongs of a fork to crimp the edges and ensure they're stuck together then lightly brush the pastry lids with a little water to secure the stars/holly shapes in the centre.

Brush over the mince pie pops with the beaten egg, including the outer edges. Bake them in the preheated oven for 12-15 minutes, or until the pies are golden.

Step 6

Allow the pies to cool on the baking sheet for 20 minutes, then use a fish slice to gently remove them from the tray and transfer them to a wire cooling rack. Sprinkle the pies with icing sugar to serve.
